Apple Cake

When trying to organize the recipe collection left to me by my mama, I came across this one for Apple Cake.  The cake is super moist and just perfect for fall!  This cake is not the prettiest I've ever seen, but it is surely one of the tastiest, especially with the caramel glaze!  YUM!!



Ingredients for cake:
1 1/4 cups veg, oil
3 eggs, thoroughly beaten
2 cups sugar
1 cup chopped nuts (I used walnuts)
3 or 4 medium apples, cut up
3 cups of self-rising flour
1 t. vanilla extract
Ingredients for glaze:
1 stick butter
1 cup light brown sugar
1/4 cup evaporated milk
1 t. vanilla extract

In a mixing bowl, put the oil, eggs, sugar, and vanilla.  Beat thoroughly.  Add the flour and mix well.  The batter will be stiff!
Remove bowl from the mixer and add the nuts and apples.  Mix by hand until all ingredients are well incorporated.
Divide batter into three 9-inch greased cake pans.  Place in cold oven.  Bake at 325 degrees for 45 minutes, or until cakes test done.
For glaze, melt butter and brown sugar in a saucepan on low heat.  Add milk and let come to a boil, stirring continuously.  Remove from heat.  Add vanilla extract.  Cool and spread between layers and over top.
